Ingredients
Canalloni
mozarella
Filling
1 C defrosted spinach
1 C low fat cream cheese
1 C ricotta cheese
1/2 C flour
1 tsp crushed garlic (yes dried is fine)
Sauce
1 C tomato paste
3 tbls dill
2 tablespoons onion soup mix
1/2 C low fat cream cheese
1 C milk
Mix all ingredients except flour to make filling
Add flour slowly until filling with sort of stick to itself and stay inside the pasta
put filling into plastic bag and cut off a corner to create a piping bag
pipe filling into UNCOOKED pasta and lay out in a baking dish
Mix all sauce ingredients except for milk until smooth
add milk until sauce had slightly runny consistancey
pour over pastaso all pasta edges are covered
cover with sgredded or thinly sliced mozarella
bake at 350* for roughly an hour or until pasta is soft

Easy meat sauce
Prep time- 5 minutes

1 pot
Ingredients
as much ground beef as you want
8 oz tomato paste
1 cups of lemon lime or gingerail soda
2 tsp onion soup powder
2 bay leaves (if you have them)
1/3 C ketchup
break up ground beef and combine with other ingredients over high heat
stir thoroughly.
turn down to a simmer until meat is cooked through
Keep stirring periodically or it all sticks to the bottom.

My favourite things
We did not bring ANY of our kitchen aplliances with us. the voltage/current/whatever is not the same here so bringing it was silly unless we planned to buy fairly expensive transformers for all of them. Becuase of that, when we moved I got to start my kitchen from scratch.
I am really not big on huge kitchen appliances, especially if they are, in the words of the Esteemed Alton Brown "Unitaskers". So I do not own a rice maker, I do not have a bread machine. Heck, even though it is a multitasker I do not even have a full mixmaster or quisenart.
But there are a few things that I went out and bought almost right away. There were some things that I needed in order to function. These "must have" items in my kitchen are as follows.
A Microwave- No questions asked. Yes I know I can heat stuff up in the oven and on the stove, but lets me honest. Who has that sort of patience? Not I!
A toaster- Ok, not a total necessity, but as our is large and we keep it milchiks it is a useful second oven as well as a quick way to heat pizza, make breakfast or lunch, and even bake. Israeli ovens are smaller than North American ones, so the extra space is useful.
A stick blender - Awesome for smushing sauces, soups, and whipping eggs and nutri whip. Also useful for pureeing vegies for kugels and cassaroles and crushing ice. It is a wonderful multi tasker that has a home on my counter because I use it pretty much daily. The one I have is parve but I am seriously considering buying a 2nd or even a 3rd one so I have for meat and dairy (milkshakes!). This is the single most useful small appliance in my kitchen.
Electric Beaters- like old style egg beaters but the electric version. Not quite the multi tasker the stick blender is, but great for most baking and pulling together batters. The one I bought has regular beaters as well as dough hooks so it has a lot of versatility without taking up a lot of room.
Crock Pot- Not just for shabbat lunch! We actually use ours for dinners as well. Load it up in the morning, have a busy day, then come home to the apartment smelling awesome and a hot dinner ready to go on the table. We are actually considering getting a 2nd one because we have found some incredible looking dairy crock pot recipies. It is probably just a pipe dream, but once in a while you find an awesome recipie that makes you reconsider.
What I consider the basics for a fully functioning, cook every night, kosher kitchen.
Dairy Stuff- a large soup/pasta pot, a small sauce pot, and a frying pan. I have a couple various sized pyrex dishes, 1 large mixing bowl, a collander, a 2 C measuring cup. 1 sharp knife. Cutting board. silicon spatulah and brush.
Parve - a large soup/pasta pot, a colander, 2 mixing bowls, pasta stiry thing, 1 & 2 C measuring cups, measuring spoons, a few pyrex dishes. chef knife, parring knife. Cutting board. silicon spatulah and brush.
Meat- full set of pots including giant stock pot, soup pot, collander, frying pan, medium sized sauce pot, small sauce pot. I normally have a wok but my old one was not worth bringing and I haven to gotten a new one yet. 1 & 2 C measuring cups, 3 mixing bowls, 3 mixing bowls with lids. Utility knife, carving set, poultry shears. silicon spatulah and brush.
Auntee Renee's Easy Fruit Cake
Prep time- 7 minutes
Cooking Time- 45-60 minutes
Feeds - at least 8-10
Number of things that get dirty- 3
1 pan or pyrex

Ingredients
3 eggs
1 C sugar
3/4 C flour
3/4 C oil or apple sauce
1/3 C orange Juice
2 tsp baking powder
1 can pie mix filling (pick your favourite flavour)
mix all ingredients except for the fruit filling
pour into pyrex or baking pan
spoon in globs of fruit filling and cut/swirl filling into cake. Do not break up completely, but break it up so it mixes throughout the cake.
Bake 350* for 45 - 60 minutes until golden brown and firm

Broccoli Kugel
Prep time- 10 minutes

Ingredients
1 10 oz package of frozen broccoli (thawed)
1/2 C mayonnaise
3 tbs flour
1 tbs onion soup powder
2-3 eggs
salt and pepper to taste
frozen pie crust OR filo dough to line bottom of baking container
combine all ingredients except pie crust or filo dough
blend until smooth
lay filo dough on bottom of baking container (if required)
pour broccoli goo into (or onto) crust
bake 350* for roughly 45 minutes until the top starts to crack

Bubbie Rice
Everyone in my family just calls this "Bubbie rice". We expect it at pretty much any meal she makes (obviously except pessach). It is always completely devoured. No one manages to make it quite like my bubbie, but I am getting better.
Prep time- 5 minutes
Cooking Time- 1 hour
Feeds - a lot. Can be doubled, trippled, or made to feed 300.
Number of things that get dirty- 1
1 large, oven safe container
Ingredients
2 cups rice (Uncle Ben's)
1/4 cup oil
1 tbsp. concentrated chicken powder
3 tablespoons instant onion soup
1 can mushrooms
4 cps water which includes the mushroom juice
2 tbsp soy sauce (or more)
Mix together all ingredients. Place covered in the oven for 1 hour or longer at 325 degrees.
Ahuva's chocolate chip Banana Cake
This recipie comes from one of my best friends (funny enough her name happens to be Ahuva- now is that a coincidence or what?
Prep time- 10 minutes
Cooking Time- 35 minutes
Feeds - a bunch, freezes well. Slice and then freeze for a quick single snack. Just pop it in the microwave for a couple minutes and you are good to go.

4 bananas - the browner the better! ( freeze bananas that are too brown to eat and use them for banana cake whenever I get around to making it. There are times where I have a small countries worth of bananas in my freezer)

1/2 C oil OR applesauce
1 C sugar
1 1/2 C flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
chocolate chips
Blend everything until smooth.
add as many chocolate chips as you deem necessary
pour into pyrex
Bake at 350* for 35 minutes

Mom's Carrot cake
I remember making this cake with my mom when I was little. I used to beg for it on a regular basis.
Prep time- 10 minutes
Cooking Time- 55-60 minutes
Feeds - a bunch, freezes well. Slice and then freeze for a quick single snack. Just pop it in the toaster for a couple minutes and you are good to go. Serve with vanilla ice cream if you want to be fancy. Also doubles well.

8 oz carrot baby food or carrot puree
1 C sugar
2 eggs
3/4 C oil or apple sauce
1 1/2 C flour
1 tsp baking powder

optional- raisins
blend carrot, sugar and eggs
add oil or apple sauce slowly until smooth
ad remaining dry ingredients and blend until flour disapears
add raisins if desires
pour into greased loaf pan
bake 350* for 55-60 minutes until toothpick comes out mostly clean.

I once heard someone say that with the internet we now have the most complete library of recipes in the history of the world at our fingertips. So why is it that when I need a meal in a hurry it takes me forever to find a appropriate recipe?
We all know that there are a million sites out there devoted to every type of cooking under the sun. There are websites for fast meals. There are websites for easy meals. There are websites for inexpensive meals. There are websites for kosher meals. To the best of my knowledge (and I have spent a lot of time looking!) there are not a whole lot of meals that cater to all these requirements at once!
If you are anything like me you too are looking for easy, fast, cheap, non-patchka-y meals. I am slowly finding and working out recipes that suit my criteria, but then I lose them! I figure if I put them all in one place, I might actually be able to find them! My plan is to collect all the ones I find and tag them to be an easy resource in one simple to remember location.

Mom's tuna Noodle Cassarole
I must have had this for dinner 3 nights a week growing up. It is fast, a full meal, and makes great leftovers. I have kept the recipe as I originally got it, but when I make it I often add various other veggies to it I have listed as optional. I also leave out the tomatoes. I hate tomatoes.
Can be made ahead but does not freeze well.
Prep time- 15 minutes
Cooking Time- 25 minutes

Ingredients
yolkless noodles
3 eggs
1 large container plain yogurt
1 green onion, chopped
2 tomatoes, slices

1 zucchini, slices thin

green beans
cook yolkless noodles as per the directions on the package
combine well drained noodles with green onion, yogurt, tuna and eggs.
mix thoroughly
add optional ingredients if desired
pour into pyrex baking dish
lay on sliced tomatoes and zucchini
sprinke with mozzarella cheese
bake at 350* for 20-30 minutes or until the top is starting to brown.

Easy Any fish
Fresh or frozen this is an easy way to prepare any white fish.
Prep time- 5
Cooking Time- 1 hour

fish of choice
lemon or orange juice
garlic powder
onion powder
marinate defrosted fish in enough juice to cover for 2 hours (in the fridge)
drain marinade
place fish on parchment lined baking tray
cook at 375* for 20-40 minutes until just starting to brown at the edges
sprinkle on garlic and onion
Max's Multi-Vegetable Soup
This is my all time favourite soup. It is a meal unto itself, can be doctored in various ways, and other than cutting the vegies comes together really quickly.
Prep time- 20 minutes minutes spread out over an hour
Cooking Time- 2 hours

Ingredients
celery
tomato
eggplant
mushrooms
carrots
parsnip

Cut up the vegetables. no need to be neat about it. Just get them to fit in the bowl. You might need to microwave them in two shifts if you are planning to make a large pot of soup.
Cover vegetables with water.
add a pinch of salt
microwave on high covered and vented for 20 minutes.
Pour into soup pot together with all remain liquid.
Allow to cool slightly
Using a stick blender blend until chunky
Serve. Enjoy.
Optional
Add barley beans, lentils and or peas.
Chocolate Mint Brownies
Ok, this recipe is anything but quick and patchka free, but it is hands down the best dessert on the planet so although I make it incredibly rarely, when I want something really special it comes out of hiding to wow everyone. It is not hard to make, just somewhat time consuming as there are a number of steps.
The nice thing about this recipe is it freezes incredibly well so I triple the recipe whenever I make it, make it in foil pans, and pop the others in the freezer for up to 6 months or so (well sealed).
This is, quite possible the worst possible tihng in the word healthwise, but it is my goto for fancy affairs.
Prep time- 20 minutes spread out an 2 hours
Cooking Time- 25 - 30 minutes +

Ingredients
Brownie layer
1 C flour
1 C sugar
1/2 C softened butter or margarine
4 eggs
1 1/2 C (16 oz) Chocolate syrup
Mint Layer
2 C powdered sugar
1 C sofened butter or margarine
1 tbs water
3/4 tsp mint extract
3 drops green food colouring
Chocolate topping
6 tbs butter or margarine
1 C semi sweet chocolate chips
Combine all brownie ingredients and beat until smooth
Pour into greased 13" x 9" pan
bake at 350* for 25-30 minutes
Cool
Combine ingredients for mint layer in bowl
cover brownie layer
Combine chocolate topping ingredients over low heat until melted.
pour over mint layer.
cool completely
Can be served frozen, but it is difficult to cut.

Lentil soup
Prep time- 15 minutes spread out over an hour
Cooking Time- 1 hour
Feeds 4-5
Number of things that get dirty- 5

Ingredients
1 C yellow lentils
7 C water
1 onion
1 tbs crushed garlic (I always have a jar of the stuff in my fridge)
2 tbs olive oil
1/4 C lemon juice
1/4 cup vinegar
salt and pepper to taste
put lentils and water in soup pot over medium heat. Cook roughly 40 minutes until solf.
Chop onion into small pieces
Saute onion and garlic until soft and carmelized
Add to soup.
Add vinegar
Simmer soup for an additional 5-10 minutes.
Remove from heat and add lemon juice and salt and pepper to taste.
Can be served as it or blended into a thick soup with no pieces floating in it. I really prefer it blended.
Sheppards Pie
Prep time- 10 minutes
Cooking Time- 1/2 - 3/4 of an hour

Ingredients
1 lb ground beef
1/3 cup of ketchup
1/2 cup bread crumbs
1 tbl onion soup powder
2 C frozen peas and carrots
1 C frozen corn
2-3 cups instant mashed potatoes (flavoured if desired)
3 egg
mix ground meat, ketchup, onion soup bread crumbs and 2 eggs together until well mixed.
spread in bottom of pan
sprinkle on frozen vegetables
mix mashed potatoes according to instructions using remaining egg as part of the liquid required.
spread potato mixture on top of vegies and meat.
If you would like a nice smooth top use a piece of plastic wrap to press down the potato mixture.
Bake at 350* until juices from the meat run clear and the potatoes are golden brown.
Beef and Barley (with optional mushrooms)
Prep time- 5-10 minutes
Cooking Time- 1.5 hours or so

1 C barley
water to cover
4 oz container tomato paste
2 tbs onion soup powder
1 lb beef cut into chunks. I have been known to use ground beef if I have some defrosted in the fridge.
optional can of mushrooms in whatever form you like.
Put barley, tomato paste and onion powder into pot with enough water to cover.
Cook as per instructions on your barley until barley is soft.
Add meat and turn down to a simmer until meat is cooked (roughly 15 minutes)
Add mushrooms if desired
Add water if necessary
simmer 5-10 more minutes.
Serve hot!
Super easy carrot kugel
So good I have company who think it is dessert.

2 jars carrot baby food. Yes you could go through all the trouble of peeling carrots, chopping carrots, boiling carrots, and pureeing carrots, but why?
3/4 C brown sugar
1/4 C white sugar
1 C flour
1 tsp baking powder
2 eggs
1/2 cup oil or applesauce
1 tsp vanilla
mix all ingredients.
put in greased springform pan
bake at 350* until slightly browned. Roughly 40 minutes.
Note. This will not rise very much if at all.
Sweet crock pot chicken Dinner with rice
Prep time- 5 minutes
Cooking Time- 6 hours or so

6-8 Skinless boneless chicken cutlets
1/2 C Brown sugar
1/4 C unsalted Soy Sauce
3 tbs Sesame Oil
1/4 C white vinegar
3/4 C Cola or Lemon/Lime soda
2 C Rice
2 C water
pinch of salt
lay chicken on the floor of the crock pot
cover brown sugar, soy sauce, sesame oil, vinegar and soda
In an oven bag put rice, water and salt.
seal bag with most of the air removed.
place in crock pot.
close lid.
cook on high for about 5-6 hours.
Crusted Salmon
Prep time- 5 minutes
Cooking Time- 25 minutes ish

baking pan (you can cheat and it barely gets dirty if you line it with a peice of parchment paper)
Ingredients
Side of salmon
1/3 - 1/2 C Your favourite salad dressing
1 C Corn flakes
plastic bag
- lay salmon out skin side down on parchment lined tray
- lightly smother (and rub in) with your favourite salad dressing (I love it with Garlic dressing, but Italian also works well.)
- put corn flakes into bag. Tie up the bag being careful to remove most of the air. Release your frustrations on the corn flakes. until they are bigger than bred crumbs but smaller than, well, cornflakes).
- sprinkle and packdpwn the cornflakes on top of the dressing
Bake uncovered at 350* for 20-30 minutes until the fish is flakey.
Chocolate Pie
This is my "Company's coming for shabbat and I have no time to do anything" dessert.
Prep time- 5 minutes
Cooking Time- 10 minutes ish

Store bought grahm cracker crust
small carton of low fat whip cream
small package of chocolate chips
Pour UNWHIPPED whipping cream into the pot.
Heat slowly
add chocolate chips and mix until smooth and melted
pour into premade crust
pop into fridge for a few hours until solid.
Optional ideas
- add whipped whip cream on top
- add a layer of peanut butter or jam under the chocolate later
- add nuts or crushed wafer to the chocolate layer
- add your favourite extract to the chocolate as it is cooking for mint, vanilla or rum flavoured pie
Tuna Patties
I usually double this recipe and it makes great sandwiches for lunch the next day.
Prep time- 5 minutes
Cooking Time- 10 minutes ish

Ingredients
1 can of tuna
1/3 C of may0
1 egg
1/2 C of bread crumbs or almond flour
1/3 C frozen peas (canned will do but I prefer frozen. I actually put them in frozen and they maintain their shape)
sesame oil to fry (you can use any oil but I find sesame adds extra flavour)
Combine all ingredients
Heat sesame oil (just enough to cover the bottom of the pan. Replenish as necessary)
Form mixture into patties about 2.5 inches across
Cook in oil until brown about half way up
flip and cook other side.
drain on cooling rack on top of paper towel. If you do not have one, paper towel will do.
We like ours in pita with salad and ketchup.
