Egg Drop soup noodles

Any soup can be made into egg drop soup.  Egg drops take the place of noodles really well without upping the carb counts at all.  Just make your soup as you normally would, then in a separate bowl beat 3-6 eggs depending on how much "drop" you want in your soup.

Once you are done, make sure your soup is at a good boil  Stir your soup to get it spinning in the pot.  Very slowly, in a thin stream, pour the egg into the spinning soup.  The "drop" cooks pretty much instantly and you look like a very impressive chef!

Max's Multi-Vegetable Soup

This is my all time favourite soup. It is a meal unto itself, can be doctored in various ways, and other than cutting the vegies comes together really quickly.

Prep time- 20 minutes minutes spread out over an hour
Cooking Time- 2 hours
Feeds as many as you want it to

Number of things that get dirty- 4
soup pot
microwave safe bowl
knife
cutting board
stick blender

Ingredients
celery
tomato
eggplant
mushrooms
carrots
parsnip
zuccinni
salt

Cut up the vegetables. no need to be neat about it. Just get them to fit in the bowl. You might need to microwave them in two shifts if you are planning to make a large pot of soup.
Cover vegetables with water.
add a pinch of salt
microwave on high covered and vented for 20 minutes.
Pour into soup pot together with all remain liquid.
Allow to cool slightly
Using a stick blender blend until chunky

Serve. Enjoy.

Optional
Add barley beans, lentils and or peas.

Lentil soup

Prep time- 15 minutes spread out over an hour
Cooking Time- 1 hour
Feeds 4-5

Number of things that get dirty- 5
soup pot
frying pan
spatula
knife
cutting board

Optional stick blender

Ingredients

1 C yellow lentils
7 C water
1 onion
1 tbs crushed garlic (I always have a jar of the stuff in my fridge)
2 tbs olive oil
1/4 C lemon juice
1/4 cup vinegar
salt and pepper to taste

put lentils and water in soup pot over medium heat. Cook roughly 40 minutes until solf.
Chop onion into small pieces
Saute onion and garlic until soft and carmelized
Add to soup.
Add vinegar
Simmer soup for an additional 5-10 minutes.

Remove from heat and add lemon juice and salt and pepper to taste.

Can be served as it or blended into a thick soup with no pieces floating in it. I really prefer it blended.
