This recipe works equally well with potatoes or zucchinis.

Ingredients
8 potatoes or 12 zucchini
1/2 teaspoon onion soup mix
6 eggs
1/2 cup oil
4 tablespoons flour
salt and pepper
peel and prep potatoes for food processor
grate potatoes. I am sure you could do this by hand if you wanted to, but I don't know why anyone would.
mix eggs, oil, flour, salt, pepper and onion soup in a bowl
squueze excess liquid out of potatoes and add to mixture in the bowl
mix thoroughly
bake at 200*C for 1 hour until a knife in the middle comes out clean.

Potato or Zucchini Kugel
Maple Glazed Carrots (and sweet potato)
Prep time- 10 minutes
Cooking Time- 15 minutes
Feeds- as many as you care to make for!

Ingredients
carrots
sweet potato if desired
maple syrup
canola oil
flour
water
cut carrots (and sweet potato if desired) into bite sized pieces. I like them fairly thin and cut on the diagonal.
puts veges into a microwave safe bowl with a s small amount of water. Cover and cook in the microwave until tender but not mushy.
Heat oil and maple syrup (just enough to coat veges) in the wok. Add partially cooked vegetable and cook until soft.
mix about a tablespoon of flour into 1/3 cup of water. pour flour and water mixture into the wok with vegetables.
mix well.
when sauce thickens, remove from heat.

Easy sweet shanghai noodles
Prep time- 2
Cooking Time- 3-7 minutes

Ingredients
some sort of long stringy noodles
1 tsp soy sauce
1 tsp sesame oil
2 tsp brown sugar
cook noodles as per package directions
add other ingredients and toss until thoroughly mixed

Ingredients
8 or more apples
2/3 c sugar
2/3 brown sugar
2/3 c margarine
2 c flour
combine everything except the apples into a bowl or ziploc bag until you get a crumbly mixture
peel and slice apples into relatively bite sized pieces
place apples in oven safe bakeware or disposable foil pan
cover in crumb mixture
bake until golden brown (roughly 30 minutes) at 180*C (350*F)
Baked Apples

Cooking Time- 30 minutes minutes

Ingredients
apples (1 per person)
margarine
brown sugar
flour
cinnamon
core as many apples as you need
peel the top third of each apple
cut an "x" into the exposed flesh so the apple has room to expand
in a ziploc bag or large brown combine a chunk of margarine and enough flour and brown sugar to make a crumbly mixture.
add a pinch or two of cinnamon
place apples in lightly greased oven safe bakeware
fills holes in apple with mixture
add about an inch of water to the pan around the apples
bake at 180*C (350*F) for about 30-45 minutes, spooning liquid from pan over every 15 minutes.
reheats amazingly well on a hotplate.

No fail frozen veggies

frozen veggie of choice (we use a lot of broccoli/cauliflower mix)
your favourite garlicy dressing
shredded cheese
bread crumbs
toss it all together and throw into an oven uncovered for 15-20 minutes at 180*C
Eggy Muffins
Prep time- 10 minutes
Cooking Time- 30 minutes per tray
Feeds a lot. We made this as a huge recipe and froze a ton of them for breakfasts and lunches. This version made 30 muffins

cup fpr breaking eggs
Ingredients
18 eggs
1/2 c bread crumbs
2 cans of tuna
1/3-1/2 c milk
1 tsp onion soup powder
garlic powder to taste
black pepper to taste
veggies from the freezer (anything bite sized that will fit nicely into your muffin tins. In theory you could also use fresh, or sauteed veggies)
1 c (ish) shredded cheese
1/3 c (ish) ketchup
Pour everything into a large mixing bowl
mix
baked in greased muffin tins. you can fill them almost full as they will only puff up a tiny bit
cook roughly 30 minutes 180* C
freeze them and thaw quickly in the microwave for a great breakfast
